Calling all the calorie conscious peeps!!
Lets check the ingredients -
1. Potato - 1/2 peeled and diced.
2. Carrot – 2 nos peeled and diced.
3. Onion – 1/2 diced and 1/2 chopped
4. Spinach – 1 bundle(about 20-25 leaves) chopped
5. Butter – 2 tsp
6. Pepper – 1-2 tsp
7. Salt – as per taste.
Procedure:
1. In a sauce pan add about 2/3rds of water.
2. To it add diced potato, diced onion and diced carrots and a little amount (about a handful) of chopped spinach.
3. Boil the above for about 10-15 mins in medium heat or till the veggies are cooked.
4. Allow the contents to cool.
5. Once cooled make a fine paste using a blender. Keep the paste aside.
6. In a pan add the butter. Before the butter melts completely add the chopped onion. Stir and wait till they turn translucent.
7. Next add the paste and mix well. Add salt and pepper according to your taste.
8. Add the remaining spinach and bring the mixture to boil.
9. Serve with a little butter on top!!
Ideal after a tiring or long day. Easy to make and is delicious too!!
